Neither sweet potatoes nor pumpkins have a really strong flavor, so both pies are about the spices and other flavorings. The real difference to me is in the texture. Pumpkin pie usually seems somewhat firmer and denser than sweet potato pie to me- but again, that could be a result of differences in preparation of the custard.
